As you may know I really love my oats, and this here is simply one of my favorite ways to prepare them. By baking your oats instead of cooking them on the stove, you get a golden slightly crispy crust, a fluffy cake-like consistency and amazing flavour
This recipe reminds me so much of the pear tart my mom used to make when I was a child! But this has no dairy, processed fats or sugars.. Instead this contains only wholesome ingredients that will make you feel energized and happy!
Ingredients: (1 person)- 70g rolled oats (not quick oats)
- 1 mashed banana
- ½ REALLY ripe pear
- 1 tsp each cinnamon, cardamom & vanilla powder
- 1 tsp coconut sugar
- 10g raisins or chopped dates
- 1/4 cup almond milk + 1/2 cup water
Preheat the oven to 200°C. Line a small pie pan with parchment paper (you could also grease with coconut oil, if you prefer).
In a bowl combine oats, spices, coconut sugar and raisins/dates.
Cut your pear into small cubes. Add pear, mashed banana and milk + water to the oats. Stir well.
Pour into prepared pie pan and bake for about 15-20 minutes (and enjoy the amazing fragrance that will spread in your house!)
The top should be golden and it should feel firm when you touch it – not too gooey. Take out of the oven, and let it cool for about 5 minutes (or as long as you have patience to leave it – for me that is not very long) 😉
Enjoy!
